                        Southern Style Cornbread (in time for Thanksgiving)

 

Ingredients:

2 eggs, beated with a fork                     2 tsp. Baking powder

1 cup cornmeal                         ¼ cup vegetable oil

1 cup flour                                            1 tsp. salt

1 cup milk                                           1 TBSP sugar

½ cup corn (fresh, canned, or frozen if it is taken out of the freezer ahead of time and soft)

 

Directions:

Preheat oven to 400 degrees.  Put all ingredients, EXCEPT THE CORN, into a large bowl.  Beat ingredients together with a wooden spoon until the mixture is smooth.  Stir in the corn and mix.  Pour the mixture into 8x8 baking pan coated with nonstick spray.  Bake in oven for 25 to 30 minutes until the cornbread is light brown on top.  Remove bread from the oven and serve it warm.  Makes 9 pieces.
